How does a moblie app backend work?

I have a pretty good understanding of how the front end of mobile apps work, but i dont have a very good understanding of the back end. If anyone could explain to me the theory of how the backend works and how it interacts with the frontend, whats the roll of APIs and anything else I should keep in mind. Thanks
